Street Taco Nachos

Made with Veggimeal

Yields: 5-8 servings

Prep time: 10 minutes

Cook time: 10 minutes

  • 1 package Veggimeal (Street Taco)
  • 1 bag tortilla chips
  • 2 cups shredded cheese
  • 1 tomato, chopped
  • 1 can sliced black olives
  • 1 green onion, chopped
  • 1 jalapeno, chopped
  1. Preheat oven to 350°F.
  2. Prepare Veggimeal Street Taco mix as per package instructions.
  3. Spread tortilla chips on lined baking sheet. Sprinkle with 1 cup shredded cheese and Veggimeal, then additional toppings. Add remaining 1 cup of cheese.
  4. Bake for 10 minutes or until cheese is melted. Enjoy with salsa, sour cream, guacamole, whatever you’d like!

Thai Lettuce Wraps

Yields: 20 wraps

Prep time: 10 minutes

Cook time: 15 minutes

 

  • 1 package Veggimeal (Thai Yellow Curry)
  • 1 head romaine lettuce (hearts)
  • 1 cup carrots, grated
  • 5 tbsp canola oil
  • 1/2 cup green onion, chopped
  1. In a medium sauce pan, cook grated carrots for 5-10 minutes on medium-high heat.
  2. In another bowl, add 2 cups of water to 1 package of Veggimeal Thai Yellow Curry with 3 tbsp of canola oil.
  3. Heat Veggimeal mixture on medium high for 5 minutes.
  4. Add shredded carrots and green onion.
  5. Cook until reduced.
  6. Scoop into romaine leaves and top with chili flakes. Enjoy!
